Autumn in One


This is another easy meal and can be prepared the night before (which is what I usually do)

Simple Method

Chop up all veggies you want in the dish (we usually have the following on hand)

Potatoes, Squash, Onions, Broccoli, Sweet Peppers, Carrots. (Throw in some apples for a hint of sweetness!)

Chop sausage and mix into veggies.

Drizzle olive oil on top, add spices or flavoring of choice.

Seal with heavy aluminum foil on top. (If not baking this straight away, like me, then place in the fridge until ready to bake)

Bake at 425F for 1 hour (or until veggies are soft)

Simple, healthy and delicious!
