Autumn Veggie Quiche

This is super easy to prepare and make… all veggies of choice can be cut and prepared in advance!


Ingredients:

(you can change the veggies according to your family’s preferences)

Potatoes (sliced thinly for the base)

Cut and peeled squash - we like to use butternut, zucchini, yellow squash

Finely chopped onions

Chopped sweet color peppers

Broccoli

Sliced Sausage (Apple/ Italian/ Spinach & Feta- you choose!)

8 whisked eggs (May need more according to size of dish- or you can add milk to make than contents ‘go further’)


Method

Heat oven to 425F

Grease pie dish or casserole dish

Layer potatoes in dish to cover the bottom. Drizzle olive oil and place in oven for 10 min.

Remove dish from oven, and add veggies, sausage and pour egg mixture over.

Place in oven for minimum of 30-45 min until cooked and golden brown on top. This may take longer if you have larger dish/ more contents.

Our girls love a little cheese sprinkled and crisped on top- I usually put on a little Parmesan.
